Rouge de Vif pumpkins from Farmer Dan

Cinderella Pumpkin Soup
This delicious recipe for seasonal pumpkin soup is from Dan's Farm and Country Market in Central Saanich, using his Cinderella or Rouge de Vif pumpkins.

Ingredients
4 to 5 cups chopped pumpkin (seeded and peeled)
1 large onion
2 cloves garlic
2 cups chicken broth OR vegetable broth OR water
½ cup shallots - optional
1 tsp salt
1 tbsp oil and/or butter
1 tsp pepper
Pinch of each of the following depending on taste: curry, basil, thyme

Optional additions to make it attractive and rich tasting
¼ cup cream (plus or minus to taste)
1 cup milk (1% can be used)

Method
Bake pumpkin in oven (or boil) until tender. Sautée onion and garlic (and shallots) in butter or oil until clear and tender. Add chicken broth and seasonings to the sautéed mixture and bring to boil. Reduce heat and simmer until all is tender – about 20 minutes. Put all ingredients into a blender or food processor and puree, and put in a large saucepan. Add cream and milk and keep on low heat until heated through, or add a cream swirl just before serving. Adjust seasoning to taste.
