Cobble Hill Saskatoon Berry Pie
In celebration of the beginning of saskatoon berry season (finally!), we offer you this basic recipe for saskatoon berry pie from the Saskatoon Berry Farm in Cobble Hill. U-pick is now open and they expect to start picking for general sales on Monday or Tuesday this week (July 18). Now, instead of Nanaimo style-bars from Dog River, we have Saskatoon-style saskatoon berry pie from Cobble Hill (Corner Gas fans will understand).
This is a very easy and fast pie to prepare. The fruit filling has a crystal appearance.
3 cups saskatoons
3/4 cup sugar
1/4 cup uncooked minute tapioca*
1 teaspoon lemon juice
Line 9″ pie plate with pastry. Combine sugar and tapioca, then blend with the saskatoons. Pour into the pie shell and sprinkle with lemon juice. Top with pastry in a lattice design. Bake in 425F/220C degree oven for 10 minutes and 350F/175C degree oven for 45-50 minutes. Serve warm. Enjoy!
*1/4 cup of flour may be substituted for the tapioca. The tapioca gives a clear shiny appearance to the cooked filling.
