Party Time Kiwi Cheesecake

Here’s a festive way to enjoy fresh local kiwi. This recipe is taken from the Kiwifruit Collection Cookbook (Brennan, McGeough and Smith, 1989). Crust:
> 1½ c. graham cracker crumbs (375 ml)
> ¼ c. brown sugar (50 ml)
> ½ tsp. all spice (2 ml)
> ½ c. melted butter (125 ml)

Combine all ingredients smoothly. Put into a 9-inch spring form cake pan, spread and press down, making sure that some of the crumbs form a rim around the edges at least 1 inch high.

Filling:
> 2 – 8 oz (250ml) packages of cream cheese, softened
> 2 eggs, slightly beaten
> ¾ c. sugar (175 ml)
> 1½ tsp. Vanilla flavouring (7 ml)
> 4 kiwifruit, peeled and sliced

In food processor or with electric mixer, beat cream cheese until creamy. Add eggs, sugar and vanilla. Beat until smooth. Lay kiwi fruit slices on the base (reserving 3 slices) and pour the filling over the kiwifruit. Bake at 350°F (180°C) for 25 minutes. Allow to cool in oven for 30 minutes. Remove, finish cooling and then refrigerate for at least 1 hour. Just before serving, cut kiwi slices into quarters and arrange decoratively on top of cheesecake. If desired, shaved semi-sweet chocolate may be added for further decoration.

Serves 6 to 8.
